If you didn't know, when making a croissant the dough is layered with butter, rolled and folded several times in succession, then rolled into a thin sheet, in a technique called laminating. Uncooked croissant dough can also be wrapped around any praline, almond paste, or chocolate before it is baked. Croissants have long been a staple of Austrian and French bakeries and patisseries.
